    This easy No Knead Focaccia bread recipe is going to blow your mind! It’s one of the simplest bread recipes that barely takes any work at all to create unbelievably tasty Italian bread. Fun fact, it's actually the first bread recipe I ever made myself and I  couldn't believe how easy it was! Since this day I can truly say, you can't beat the taste of fresh bread 😊. I now love making different bread recipes such as Persian flatbread - noon barbari, along with this simple yogurt pita flatbread and even healthy bagels.

    If you haven't made bread before, this focaccia recipe is the perfect place to start for new beginners. I know bread making can seem a little daunting and scary at first, but trust me this recipe will definitely change your mind. It requires no kneading or fancy equipment. You basically add the ingredients to a bowl, stir, and pop in the fridge to proof overnight while you sleep. The hardest part is patiently waiting for the dough to double proof which is the key to making the best focaccia bread. 

    Think crunchy on the outside, soft and chewy in the middle…the smell in your house while its baking will drive you crazy it's that good! I've been spending some time in Italy the last couple of years and my Italian friends call me the Focaccia Queen. They always ask me to make it for gatherings and the whole loaf is eaten within minutes. You can simply enjoy it on its own, but I love to serve with my bread dipping oil whilst sipping on a limoncello spritz as an aperitivo when hosting an Italian night 😊

    The traditional topping on focaccia and my usual go-to is extra virgin olive oil, rosemary and flaky salt...you can't beat a classic in my eyes! I however love switching it up with different toppings too and have an extensive list below to help. There are also plenty of different recipes you can make using this same no knead focaccia as the base. Such as my focaccia pizza and even these cute focaccia muffins which are so fun for parties.

    What is Focaccia?

    So you might be wondering, what actually is Focaccia and why does everyone love it so much. Focaccia is a classic Italian bread and technically thought of as a flatbread. It’s super soft with an airy texture and a crispy golden crust. Traditionally baked in a flat rectangular baking sheet pan for its signature form.

    It’s made with the standard bread ingredients including flour, water, yeast, olive oil, and salt, but what makes it special is its high hydration dough and signature dimples on top with a generous amount of extra-virgin olive oil for the perfect crunchy delicious focaccia.

    Focaccia is traditionally enjoyed on its own or dipped into extra virgin olive oil or a yummy bread dipping oil. However you can also use it as sandwich bread, or serve alongside soups, stews and pasta. You can flavor it with fresh or dried herbs, olives, garlic and even cherry tomatoes. The toppings are endless making it so popular and a favorite in Italian cuisine.

    Ingredients and Substitutions

    • All purpose flour is the base of the dough, creating a soft yet sturdy texture. You can substitute with bread flour for extra chewiness due to its higher protein content, or even 00 flour. I haven't tested whole wheat flour or gluten-free flour myself, however there are some comments and reviews from some people that have to help
    • Instant dry yeast or active yeast will assist the dough to rise over a double proofing method. *If using active dry yeast, make sure that bubbles or foam appear in the water before mixing into the flour bowl. This is to ensure the yeast is still alive
    • Warm water activates the yeast and creates a high hydration dough for a light, airy texture. Ensure the water isn't too hot and only luke warm - I suggest an easy ratio of 1 ½ cups room temperature to ½ cup boiling water 
    • Salt enhances the overall flavor and taste of the focaccia bread 
    • Sugar feeds the yeast and gives the bread a subtle depth of flavor and golden color
    • Extra virgin olive oil is crucial for the perfect focaccia, adding richness and enhances the flavor and aroma. It's always best to use a good quality olive oil 

    Focaccia Toppings

    The toppings are endless when making focaccia bread! Here are some personal favorites:

    • Classic - fresh rosemary, flaky sea salt, extra-virgin olive oil is my go-to
    • Cherry tomatoes, olives and oregano (focaccia Barese style)
    • Focaccia pizza flavorings with pizza sauce and mozzarella 
    • Red pepper flakes, chili oil, or chopped sun-dried tomatoes
    • Other fresh or dry herbs such as oregano or thyme 
    • Everything bagel seasoning 
    • Caramelized onions 
    • Confit garlic cloves or garlic oil
    • Grated Parmigiano Reggiano (parmesan cheese)
    • Turn them into cute focaccia muffins instead!

    How to make No Knead Focaccia

    This No Knead Focaccia recipe is simple, foolproof, and perfect for beginners. With minimal effort and an overnight rise, you'll get a light, airy texture with a crisp golden crust. Follow my simple steps below (find quantities in the recipe card below)

    In a large bowl, stir together flour and salt

    Yeast and water mixed in a small bowl

    In a separate bowl, mix warm water, sugar, and instant yeast. If using active yeast, wait for bubbles to appear before continuing

    Pour the yeast mixture into the flour and mix well with a spatula or wooden spoon until no dry flour remains. The dough should be thick and sticky

    Drizzle with olive oil, cover with plastic wrap, and refrigerate overnight (10-12 hours)

    Coat a 9×13-inch (34x27 cm) baking dish with olive oil. Lightly oil your hands, transfer the dough to the dish and gently stretch it to fit evenly

    Cover with plastic wrap and let it rise at room temperature for 2-4 hours until doubled

    Preheat oven to 425°F (220°C). Oil your fingers and press dimples into the dough, , keeping any air bubbles intact

    Drizzle with olive oil and sprinkle with rosemary and flaky salt. Bake for 20-25 minutes (or up to 30 if needed) until golden brown

    Remove from the oven and transfer the focaccia straight to a wire rack. Let it cool for 10 minutes before slicing. Enjoy!

    Focaccia Variations

    You can turn this same focaccia recipe into other delicious creations! Here are some fun ways to use the same dough:

    No knead focaccia with barese topping with olives, oregano and cherry tomatoes

    Try using a round baking dish for a simple twist inspired by focaccia Barese from Bari in Puglia, Italy. Topped with cherry tomatoes, olives, and oregano for a delicious flavor

    Make a focaccia pizza! Add your pizza sauce, favorite toppings and mozzarella, and bake until golden brown and melty for an easy thick-crust pizza

    Same Day Focaccia

    If you don't have the time to make the overnight focaccia dough or you want to make a last minute batch, here's how to make a same day focaccia recipe:

    1. Follow the same steps 1-4 however don’t place in the fridge. Once you've made the dough and covered it in plastic wrap, leave it to proof for about 2 hours at room temperature, preferably in a warm place in the house like a windowsill until it doubles or even triples in size
    2. Continue steps 5-7, however the second rise should only take 30 minutes to 1 hour to double in size and fill the oven dish
    3. Continue the same steps 8-10 and enjoy your same day focaccia!

    Serving Suggestions

    This focaccia recipe is super versatile. Here are some great ways to enjoy it:

    • With extra virgin olive oil, bread dipping oil, basil oil or balsamic vinegar
    • Dips such as hummus, tirokafteri - spicy feta dip, whipped ricotta or whipped feta dip
    • For sandwiches like burrata caprese, chopped Italian sandwich and grinder salad 
    • As a side with stews or soups such as minestrone soup or pastina soup
    • Alongside Italian pasta dishes including pasta alla norma and spaghetti aglio e olio
    • For pizza lovers top it with mozzarella, cherry tomatoes and basil pesto

    Tips and Tricks

    • If using active yeast you must make sure that bubbles or foam appear in the water before adding into the flour bowl. This ensures the yeast is still alive. If there are no bubbles or foam, you may need to make a new batch
    • Use an non-stick oven dish or baking pan, or the focaccia will get stuck after it’s baked and will be very hard to remove otherwise. You can add parchment paper to your dish if preferred before adding the oil
    • Generously coat the oven dish with 2-3 tablespoons of olive oil. It may sound like a lot, but it’s required so that the dough doesn’t stick and it gives the focaccia its signature flavor and texture
    • When handling the dough and dimpling, ensure to add a little olive oil to your hands and fingertips. The dough is super sticky and will stick to your hands and fingers otherwise
    • All ovens are different in strength so cook time can slightly change. Check the color at 20 mins, especially for a strong oven. If your oven isn't very strong, it can take up to 25-30 mins
    • Let the focaccia rest and cool down for 5-10 minutes on a cooling rack before slicing and enjoying

    Storage Instructions

    • Keep leftover focaccia wrapped tightly in plastic wrap at room temperature for up to 2-3 days. You can also store in the fridge for up to a week 
    • Reheat in the oven, toaster oven or air fryer for a few minutes to refresh the texture. You can also microwave it but it will lose its crunch
    • Freeze leftover focaccia for up to 1 month. Slice and freeze separately on a baking tray for 2 hours, then stack in a freezer bag. Thaw and reheat as above and enjoy!

    FAQs

    What is the secret to great focaccia?

    The key to the perfect focaccia is using a very slow fermentation in the fridge where the dough slowly rises for 10-12 hours, followed by a second proof before baking resulting in fluffy delicious airy bubbly focaccia bread

    How to make same day focaccia?

    Follow the same recipe, however don't place in the fridge. Proof at room temperature for 2 hours, followed by 1 hour for the second proof (more detailed instructions are above in post)

    Can I make the focaccia dough in advance?

    Yes! You can even refrigerate for up to 48 hours for an even slower development on the dough rise

    Which flour is best for focaccia?

    Standard all purpose flour works great for focaccia due to it's very slow overnight rise, however bread flour will give you an even better result with a more chewy texture due to its higher protein content

    • 17.5oz / 500g all purpose flour (you can also use 00 or bread flour)
    • 2 cups warm water (1 ½ cups room temperature water + ½ cup boiling water)
    • 2 teaspoons dry instant yeast - or active yeast
    • 1 teaspoon sugar
    • 2 teaspoons salt
    • 4 tablespoons extra virgin olive oil

    Toppings

    • 1 tablespoon extra virgin olive oil
    • 2 sprigs fresh rosemary leaves
    • Flaky sea salt

    Instructions

    • In a large bowl, add flour, salt and stir together
    • In a separate bowl, add the warm water, sugar and instant yeast and stir together
      **If using active yeast, ensure to wait until bubbles or foam appear before moving to the next step
    • Pour the yeasty water into the flour bowl and mix together with a spatula or wooden spoon. Make sure to mix it well so there is no flour left at the bottom of the bowl. It should be a very thick sticky dough
    • Drizzle the top with olive oil, cover with plastic wrap and place in the fridge to rest and rise overnight (~10-12 hours). The next day, the dough should have tripled in size
    • Add 2-3 tablespoons of olive oil to a non stick oven dish (9×13 inch or 34x27 cm in size), making sure the sides of the dish have also been lightly coated with the oil (you can also place parchment paper in the dish if preferred before the oil)
    • Add a little olive oil to your hands and move the dough into the oven dish. Carefully stretch the dough into the shape of the oven dish, levelling the top to be even
    • Cover the dish with plastic wrap and leave to proof again at room temperature  in a warm place for 2-4 hours until doubled in size
    • Preheat oven to 425°F / 220°C. Add oil to your fingers and press fingers into the dough to make dimples all over the top of the dough
    • Drizzle with olive oil and sprinkle with rosemary leaves and flaky salt. Bake for 20-25 minutes until nicely golden brown (if your oven isn’t very strong, it can take 30 minutes - just keep an eye on it)
    • Remove from the oven and transfer the focaccia out of the dish straight away to a wire rack and allow to cool for about 10 minutes before slicing.
      Slice and serve your delicious No Knead Focaccia bread alongside the best bread dipping oil or my homemade basil oil for the perfect combo and enjoy!

    Notes

    • Yeast - if using active yeast, make sure bubbles or foam appear before mixing with flour, this confirms the yeast is alive. If no bubbles, start fresh

        Its about 4 cups and 2 Tbsp but its always best to measure flour by its weight using a scale for the correct results xx

              I’m not a focaccia fan but I was having friends over for pasta night and thought I’d try this recipe because of the ease Ayeh made it look!
              It was easy, delicious and everyone loved it including me!
              Definitely don’t skimp on the olive oil in the pan and better yet use parchment paper in the bottom.

              I have tried your recipe twice.
              The 2 cups of water makes the dough extremely liquidy.The dough did not rise in the fridge.What am I doing wong.

              Hi dear, that doesnt sound right lovely. Have you measured the flour by weight? You can add a touch of extra flour if its too wet but it shouldn't be liquidy, it should be a very sticky dough. Also I have tips re testing your yeast to make sure its alive before using it xxx

              My dough didn't rise. It didn't seem to liquidy. It was sticky. I used the 4 cups and 2 tablespoons of flour and my yeast was bubbling some before I put it in. Then poured 1/4 cup olive oil over it. It said 4 tablespoons so that's 1/4 cup. Any suggestions? I put It in the fridge with a damp towel over it

              Hi Nicole, oh no the oil seems to be the issue as you need to add it in stages. The dough only needs a light drizzle of olive oil before it goes into the fridge - step 3. You then add some of the remaining olive oil to the dish in step 4, then top with the rest of the oil in step 8. hope this helps x

            My dough didn't rise at all though I followed the instructions. In the video you put yeast in the flour, that's definitely not salt! You don't mention that in the recipe. I should have watched it first instead of wasting expensive 00 flour.

              Oh no, if the dough didn't rise, it could be an issue with the yeast. The video and recipe are the same : Step 1 to add salt and flour to a bowl, Step 2 is to separately combine yeast, sugar and warm water which is then mixed into the flour bowl. You can also use plain all purpose flour, instead of 00 flour. Hope this helps 🙂

              Unfortunately not with this recipe, its a no knead dough so it needs time to ferment and proof twice for the best texture

          Amazing recipe! I’ve now made it 3 times and it works perfectly each time. The last time I made it, I did half whole meal flour and half plain flour and it turned out perfect! I love dressing it olives and jalapeños:)

              I have it in the oven now. It only rose up about double. I tried a first batch which totally failed. (Expired yeast but gave it a shot in case it still worked. It didn’t.) The second batch rose about half. Definitely not 3 x’s. I used non expired yeast, wondering if the liquid I used was too hot. I left it on the counter not in the fridge as the first batch didn’t rise and in the comments it says you can have it on the counter. Not sure what I’m doing wrong. It’s just not rising as high as it’s recommended. Proofed for a good 12+ hours and proofed it again. Mine seems off a bit. Fingers crossed it works. Just curious what I did wrong

              Hi Laura, oh no that doesn't sound right. The water should be warm, not too hot. The yeast also needs to be not expired. How did the second proof go when you moved it to the baking dish?

          I substituted the flour for gluten free flour and it worked great! (Just needed to be baked a tad longer) If you can’t eat gluten because of allergies like me I’d definitely recommend trying this

              Just finished baking this. Delicious and super easy. I’m going to have to put it out of reach as I’m grabbing a bite every time I walk by;) Topped with dried rosemary as I didn’t have fresh, coarse salt and a bit of fresh grated Parmesan. Would definitely recommend parchment paper. I used a glass baking dish with 2.5 Tbs olive oil, but it still stuck to pan.

          Hi Ayeh, i’m wondering if the 12hrs proofing is critical? Does it matter if the proofing is longer? Or less?
          I don’get up very early so by the time i make it, 12 hrs ends up being overnight for me Thankyou

            The longer overnight proofing will give you better fermentation and texture, but it will still work with a slightly less and more proof time xxx

          When I heard that crackle of crispness - I was in love - and making it didn’t disappoint wow it’s awesome love it- and now I’m spoiled for taste - can’t eat regular bread anymore
          And the easy level doesn’t hurt either

        Saw your recipe 10pm at night while watching the Olympics and decided to make it. It’s blown my mind! I put in olives and sundried tomato and had it for lunch. Mum was incredibly impressed. I didn’t use as much oil so the baking paper helped. Thank you for this recipe !

              This focaccia bread turned out so delicious! Simple recipe with easy to follow instructions. I topped mine with thinly sliced cherry tomatoes, grated parmesan cheese and fresh basil leaves. I believe this was one of the best focaccia breads I've ever had 🙂

      This was very easy to make and super delicious! Highly recommended!

      I did have a problem with the focaccia sticking in the pan a bit, so either make sure your pan really is nonstick, or use parchment paper. I’ll be trying that next time.

      Absolutely delicious! I added olives on top and kept the rest of the recipe more or less the same. I ended up doing 27mins in the oven and 24hrs of proofing in the fridge but it was little bit overdone so definitely stick to Ayeh's recommendation! It's so fluffy yet crispy, I ate a quarter of it straight out the oven and will never be buying bread again. If you're like me and a bit sick of sourdough, look no further, this will be your new vice.

      As a regular bread-baker, I found that this recipe was especially a stand out. I found it to be quite fool-proof as well; I made the foolish mistake of doing it all in one bowl instead of making the separate yeasty-water mixture (due to keenness and excitement), but it turned out AMAZING either way. So satisfyingly crispy on the outside and fluffy in the middle, as Ayeh promised. Plus, it was so easy to make and mess-free, I poured out the dough onto my pan with a spatula and dimpled with chopsticks (haha). This recipe is a 10/10 from me ! I'll be making it again in a larger batch next time. Thanks Ayeh! xx

      I tried baking mine with sundried tomatoes and Asiago cheese on one half and then the original rosemary & salt on the other half! Worked out amazingly - still soft in the centre and crispy on the outside! It required a slightly longer cooking time with the additional toppings but I only used 1.5 tsp thinly sliced sundried tomatoes and 2 tsp grated Asiago to ensure the bread could still rise! 5 stars thanks so much for sharing this!

          Oh no, did you use a non stick dish? Its very sticky so it needs to be baked in a non stick dish or use baking paper. i have some tip on this xx

      Honestly the most easy and delicious focaccia recipe! Made it two days in a row and both times came out super! My husband and I we both come from Italy so we were so impressed!       This bread came out amazing!! I was so excited to try it that I even bought a baking scale from Target lol! I put it all together in the morning and by the time I came home after being out all day, it was perfectly risen. I spread it out on the sheet tray for two hours and baked it with rosemary for 25 mins at 425°!! My friends and I LOOVED IT, so easy and impresses ANY crowd:)

      I’ve never attempted to make any type of bread before because Mum is the queen of breads but I had to try this! It looked too easy and good to be true!

      Blown away! I may have to share that crown! Made it today. Added rosemary and some dried onion flakes and let’s just say the Queen was impressed. So delicious and CRUNCHY yet soft! How is that even possible!

      Absolutely the easiest and yummiest focaccia I’ve ever made. Definitely recommend giving it a go. I love the fact that you can start this the night before and just get up the next day and it’s halfway done.       SO YUM! This was the easiest focaccia to make, and that’s coming from someone who freaks out whenever a recipe has yeast in it. Instantly gets put in the too hard basket . This was delicious and super quick and easy, so yummy to have with oil and seeds, as a sandwich or just on its own! Couldn’t recommend more.

      This is so tasty for a recipe which is so simple. 10/10. Baking time for me was longer (~40 mins) because of my oven, otherwise, recipe is on point. Following you on instagram was a great idea. I just had few questions to anyone who could answer.
      1. I could not dimple the dough as satisfactorily as Ayeh did in the video, dough kept getting stuck to my fingers
      2. My bottom part was not as crispy or brown (I had both top-bottom heating at 220C in oven)

      I appreciate any tips!

        Hi lovely! For dimpling or handling the dough, always have olive oil on your fingers to stop it from sticking (check out my tips its all in there xx)
        Also did you cook on the bottom level of your oven?
        All ovens do have different strengths, so it might just mean you'll need to cook for 5-10 mins longer xx

      I think you should not suggest using the baking paper. Now we cant eat the bottom crust as it cannot be peeled off

        Oh no, It shouldn't stick to your baking paper dear. The baking paper helps it from sticking to the dish.. Did you still add olive oil to the paper?

      Wow this is the easiest bread I’ve ever made - so good! Love the simplicity of this recipe. Did a version with 1/3 flour and 2/3 whole wheat flour and it worked a treat. 🙂

      I have never ever ever made bread before. Never used yeast before. Found it in the pantry and mixed it with the water then started reading the tips and saw that it has to bubble or be foamy. It wasn’t. The yeast was expired so went to Woolies at 8pm and made it and it was PHENOMENAL! Will be making AGAIN AND AGAIN!

      I recently got a grad job offer that starts tmr and decided to include fam favorites from Ayeh's recipes in the fam dinner I am hosting tonight. For the focaccia;
      The EASIEST and I mean the EASIEST DOUGH MIXING I'VE EVER HAD TO DO. It does literally say 'no knead' in the recipe but I was surprised when there literally was NO KNEAD to put in a lot of effort to combine the ingredients as I do with cookie dough. I was worried the prep would take up a lot of my time. Because of this I got so excited and ended up making two doughs and left them overnight. It's now the next morning and I'm excited to check out the RISE !!

      Simple, Delicious and a Family Favourite!
      This focaccia was just absolutely amazing! As a student who loves easy baking, this was the perfect recipe to make on a Sunday afternoon before study! Crunchy on the outside and so fluffy, this is by far the easiest bread recipe I've ever made. I made two variations, one with jalapeno and cheese and another with everything but the bagel seasoning! Both tasted great but the jalapeno and cheese was definitely the favorite since everyone finished it before I got to get another slice! Highly recommend this to anyone new to baking because you just can't go wrong, or even people who have been baking for time because it's such a classic! Loved this recipe Ayeh, thank you so much for sharing! ❤️

      First time making focaccia and this recipe was perfect! Crispy on the outside, soft in the middle. I accidentally let it proof super long for the first proof (like 15-ish hours) but it still turned out fine. It came out of the oven about 30 mins ago and we've already eaten half of it.

      Aren't you supposed to leave the dough to rise in a warm place? I'm confused why your recipe directions say to put it IN the fridge??? Perhaps it's a mistake? Maybe you meant to say, ON the fridge? I hope so, lol

      Excellent, simple, and quick recipe! I just finished making it for the first time, and it came out perfect! Just 10 minutes later, almost half is gone! Thank you!

      One observation: I used a Pyrex pan, and even though I pre-oiled it, the focaccia still stuck to the sides and the bottom, and I had to work it off carefully, with a spatula. I think a non-stick pan, or wax paper would have been better.

          I was so nervous about making this. I have never made any sort of bread or used yeast at all.

          It turned out great and only needed 15 minutes to cook in my oven. So glad I gave it a try!

          Side note: I was really confused about the wait for the yeast to bubble in the lukewarm water. - my yeast didn’t bubble however, I waited until it was active (creaming kind of texture at the top of the water, between 5-10 minutes).

      I tried this recipe twice and both were fails. The first time I put it in the fridge for 12 hours and it didn't rise or triple in size. The second time I left it out and it didn't rise or triple or double in size. Not sure what I did wrong. I used all purpose flour and quick rise instant yeast. I was really disappointed.

        Oh no, that doesn't sound right Mary. If the dough isn't rising or changing it all, it sounds like it could be an issue with the yeast. I'd suggest to use a new batch of yeast as the yeast is a crutial ingredient to the recipe. Let me know how you go 🙂

        As its a long proof overnight, its best to keep in the fridge for the first proof as it helps with the fermentation and texture. Oh yay the dip is the perfect combo!

        Oh no, it shouldn't be liquidy, it should be thick and sticky. It sounds like it needs more flour. Are you weighing the flour amount? Its always best to weigh flour rather than using cups

      This bread was great. I baked it in a glass baking dish, which was coated in olive oil. It was very difficult to get out, but I managed to do it. I will definitely make this again, but will use parchment paper next time. Made this at altitude of 5280 with no adjustments. Thank you.

      This was an easy recipe to follow. The focaccia turned out great and tastes really good. The “waiting to rise” period is long, but worth it. The plus is -if you make it yourself, there’s no preservatives and you can control the amount of salt.
      If I could leave a picture/video I would.

        Oh no sorry to hear, it could be the yeast. If its expired or a bad batch it wont work as yeast has a mind of its own sometimes. Also make sure the water is warm and not too hot.

      I have no clue what I did wrong. Weighed the flour followed instructions. Mixed 2 cup water with yeast and sugar but when combining dry and wet mixtures it was way way too dry. Had to add lot more water to get it to be sticky. It's in the fridge for overnight now, we will see what happens.

      amazing recipe! only thing i’d change is adding a final rise after dimpling, i may be misreading but i can’t see that in the recipe and i found that if i baked straight after dimpling it would make a pretty flat bread with no airy texture 🙂

        So happy you liked the recipe 🙂 Oh no sorry to hear this, it shouldnt flatten out from the dimpling as the bread should have risen quite high beforehand. Make sure to allow the second proof to double in size which should take 2-4 hours . I hope this helps xxx

      This was so easy and fantastic to make! As soon as it came out of the oven, the fam gathered around ready to dive in! We ate half of the bread before dinner was served.
      I used Penzey's Bavarian spice instead of the rosemary as it is our favorite!

      I followed directions and took it out of refrigerator this am after being in all night. There are bubbles in it but it did not triple in size. Letting it come to room temp . Looks like it is going to be flat. New jar of Instant Yeast. Any ideas where I went wrong? I am not a bread maker, but trying to learn.

        Hi Stephen, oh no sorry to hear. If it hasn't risen at all and didn't change in size, it unfortunately is the yeast. It has a mind of its own and does it sometimes if it wasn't a good batch. Make sure the water isn't too hot also as this can affect the yeast and try again. Let me know how you go, happy to help x

      I use this recipe as a pizza base. I add passata with oil, salt and pepper, with pepperoni and thinly sliced onion and cook for 20 minutes then add mozzarella and cook for a couple more minutes. It’s so easy and delicious!

      I used a Wiltshire ceramic oven dish and despite putting tons olive oil to the base and sides, my bread got stuck so bad! Had to scrap it out in pieces. I would definitely recommend putting baking paper.

      Um…I followed your instructions, and because I’m new to yeast baking-followed them to a “T”. Well I left my dough in the fridge to proof overnight as per the instructions, and yet my dough hadn’t grown one bit. I then remembered that yeast won’t rise in cold temperatures. The optimal temp for it is like 80 degrees. So why do the instructions say to put it in the refrigerator overnight?

        Oh no, sorry to hear this. This is usually caused if the yeast wasnt good. The overnight proof in the fridge is done for fermentation. Try with a new batch of yeast and make sure to use warm water, not hot water xx

      Just got my bread out of the oven and my apartment smells amazing. I did not use a nonstick pan and I am so sorry because it stuck to the bottom. After letting it cool, I tasted a piece, and it is delicious! I will definitely be making it again using a nonstick pan so that it doesn't stick.       Love this recipe! I made it quick rise-warm oven for four hours vs. 15 hours over night (I needed it for dinner) then let it rise in the pan on a warm stove top for an hour!!!

        I must admit I havnt tried this myself. However It does have a tendency to stick, so its probably best to also use baking paper if you're wishing to use a cast iron xxx

      I'm not sure what I am doing wrong. I added 4 cups of flour, 2 cups of warm water, waited for the yeast to bubble before adding to flour. But the dough is super dry. When I watch the video it looks like you have less flour then me and more water. I have added more water but I don't know whether it will work.

        Hi lovely, with making any bread its always best to measure the flour by weight to ensure you have the right amount. Do you have kitchen scales to use? Yes the dough needs to be very sticky and tacky. Let me know how you go 🙂

      I loved this recipe - as all of your recipes- could I put some fibre into this focaccia- any ideas ?!

      When I made this focaccia the first time it lasted all of 5 mins and it was gone. I decided to bring it to my future inlaws and they are Italian and ever since, I am asked everytime if I brought more. Nonna said it's better than the bakery where she buys hers. This is a 5 star recipe and anyone who gives it less didn't make it right!

      I've made this so many times with lots of success. My old workplace had an oven so I'd prep the dough in a tupperware the night before, let it get back to room temp on the way to work, let it rise in a baking tray for a few hours in the morning and bake before lunchtime. I've done it for office potluck too and my coworkers LOVED it.
      I made it for a get-together yesterday and my bf told me this was the best batch yet.
      I decided on a whim so I didn't follow the proofing-times fully but I did the 1st rise in the fridge for 2-3 hours, let it come to room temp for about 1.5h then 2nd rise in a baking tray for about 2h. So bouncy and moist.

      This recipe is incredible!! I’ve tried many different focaccia recipes and this beats them all by a mile. I usually just leave it on the bench to triple in size and find this works well. Tonight I tried using the dough as a pizza base and it worked so damn well, I just spilt the dough into 4 and then spread them onto baking trays and then added toppings and cooked! Well worth a try!!!

      The first time I made this, it was finished baking before the meal, we stood around the island and nearly finished it off before dinner, it was that good. I've made it a few more times since, and just yesterday had a request to bring it to dinner tonight! We bake it at our friends' house so we can eat it hot out of the oven... which is the best way!
      Thank you for sharing your wonderful recipe! So easy to make and delicious to eat!
      Side note: I use Penzey's Bavarian seasoning instead of the rosemary! If you have never tried it, I highly suggest you do!

      This is beautiful every time! It's an impressive go-to. This time I topped with flaky salt, rosemary and oregano, and some tiny grape tomatoes, not too heavy, and it's gorgeous (though next time I would probably add flaky salt after the 2nd rise, right before it goes in the oven, as it was, it just dissolved on the super moist dough while rising).
